Hostess Cupcake Attempt


For this cupcake based week I attempted to try something a bit harder than what im used to. Ive never did a cupcake that had filling or more than a few steps to complete so I tried my best to find a recipe looked delicious yet a little complicated.

After getting all the in
gredients I needed I got to work. I started with the cake part which seemed to be going good..





until I realized that I needed egg yolks and egg whites at two separate times
of the baking process. I basically just stuffed two eggs into the mixture, so without
starting over I thought I might as well just prepare an extra two egg whites.
This was my first time making egg whites and I didn't have a blender so I handbeate
d the eggs for a good 25 minutes until they were white... I severely underestimated how long it
would take without
a blender.
After this
process I added the whites to the batch and it was
time to bake them.
While they were baking I started work on the filling which was simple.. on paper. I had a hard
time understanding how to mix the ingredients on a metal pan on simmering water.
So I ended up heating water on low, placing a glass bowl on top and mixing them that way. again without a mixing tool I ended up beating the ingredients
by hand for a good 20 minutes until it was fluffy and filling like. At this t
ime the cupcakes were cooling on the rack and the filling was finished.
The ganache was next. This part was basically the easiest because all I had to do was heat up cream and add chocolate so once that was done it was time to start creating the cupcake.
I put some filling in
a tipped
bottle and injected it into the top of each cupcake until a fair amount was put in. after that I dipped each cupcake into the ganache and smoothed them out with a wet knife. Once the frosting dried a bit I started putting the hostess swirls on the tops. This however did not work for me because every time I tried it slipped off like water. I was a little disappointed by that :(
But once they cooled down I let everyone have a try and they loved it :D the cupcakes didnt last very long because everyone kept eating them and that made me happy! This recipe definitely was challenging but it worked out in the end and I have alot of new ideas for filling type cupcakes in the future.
